For a veggie version of the foccacia, just swap the chicken for sliced chargrilled artichoke hearts and toasted cashew nuts and if you can eat cheese, add some thinly sliced halloumi.

Italian-style focaccia

An Italian-style sandwich, filled with roast chicken breast, red pepper and wild rocket.

Ingredients

½ x pack freefrom rosemary focaccia
1 teaspoon wholegrain mustard
125g roast chicken breast fillet
1 red pepper, halved, deseeded and roasted
25g wild rocket leaves

 


Method

1.  Cut the focaccia in half lengthways and spread with the mustard.

2.  Layer the chicken, pepper and rocket on one half of the focaccia and add the top half to make a sandwich.

3.  In a hot griddle pan, toast the sandwich on both sides. Great served with a side salad for a healthy lunch.
