Kotthu Roti - (Sri Lankan Recipe)

This is one of my favourite dishes from our country's origin - (being born and bought up in the UK).
It's kind of simple though, you need to allocate at least 45 mins for it!
What you need is:
a) 3 eggs
b) Chillies
c) Onions
d) Garlic
e) Ginger
f) Fennel Seeds
g) Mustard Seeds
f) White Pitta bread or brown pitta bread
g) Meat cut into tiny pieces
How to prepare:-
1) Set the cooker on '6'
2) Cut the pitta bread, with a pair of kitchen scissors into thin tiny strips
3) Chop up the onions and fry them, adding one teaspoon of mustard seeds and fennel seeds, mixing it all in, and add the chillies, and ginger together
4) Chop up the meat, cook it in a separate pot and add some tomatoes and tomatoe puree
5) Break 3 eggs into the pan of chillies etc, and scramble it up.
6) Once the meat is cooked, turn off the heat, doing the same with the scrambled egg
7) If you have a rice cooker, or a large pot, mix everything in togther i.e. the meat, egg, and pitta bread, and give it a good stir!
8) Serve while it is hot - it is delicious and scrummy - especially for a cold snowy day - and keeps you warm and full inside! Enjoy! :)
